Black Beans, Sweet Potato & Kale Tempeh Salad
A healthy and hearty salad using our BBQ Tempeh Pieces mixed with black beans, kale and roasted sweet potato to create a delicious, high protein dish.

ingredients
- 1 pack of our BBQ Tempeh Pieces
- 100g Kale
- 1x red bell pepper
- 250g Black beans
- 1x sweet potato (Sliced into Moons)
- 1x avocado
- Black Olives (Thinly sliced)
Dressing
- 1x Lemon (Juice)
- 2 Tbsp Extra Virgin Olive Oil
- Salt & Pepper
instructions
- Preheat the oven to 200c/392f. Add the sweet potato moons to a baking tray and roast for 25-30 minutes.
- Add a pack of BBQ Tempeh Pieces and kale to the baking tray cooking for a further 4 minutes before removing.
- Simmer the black beans to the time stated on the packet, before running under some cool water and draining.
- Add all the ingredients stated to a salad bowl. Mix well and serve.
