SALAD WITH Tempeh, chopped veggies and Puy Lentils

You'll love this quick and easy salad packed with protein, plant points and gut-loving fibre. Now, this isn't just a salad, this is a supercharged salad.

ingredients

Marinade for the Tempeh -

  • 1/2 tsp paprika 
  • 1/2 tsp cumin
  • 1/2 tsp chilli powder 
  • 1x lemon (juice)

Chopped Vegetables / Lentils

  • 250g puy lentils
  • 1x tomato
  • 1/2 cucumber 
  • Pomegranate seeds
  • 1/2 red onion
  • 1/2 red chill
  • 1/2 bell pepper
  • 5 - 10 g mint 
  • Lemon
  • Tbsp extra virgin olive oil
  • Tbsp Sumac (optional)
  • Salt & Pepper

instructions

  1. Dice all the stated ingredients
  2. Cut the organic tempeh into mini cubes. Add the selected spices, olive oil and lemon juice and mix well.
  3. Add to a tsp of vegetable oil to medium heat frying pan. Add the tempeh and cook for 3-4 minutes.
  4. Remove from the heat and combine in a mixing bowl with the puy lentils and chopped vegetables. Mix well and serve.
