SALAD WITH Tempeh, chopped veggies and Puy Lentils

ingredients
- 1 x Organic Tempeh
Marinade for the Tempeh -
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp chilli powder
- 1x lemon (juice)
Chopped Vegetables / Lentils
- 250g puy lentils
- 1x tomato
- 1/2 cucumber
- Pomegranate seeds
- 1/2 red onion
- 1/2 red chill
- 1/2 bell pepper
- 5 - 10 g mint
- Lemon
- Tbsp extra virgin olive oil
- Tbsp Sumac (optional)
- Salt & Pepper
instructions
- Dice all the stated ingredients
- Cut the organic tempeh into mini cubes. Add the selected spices, olive oil and lemon juice and mix well.
- Add to a tsp of vegetable oil to medium heat frying pan. Add the tempeh and cook for 3-4 minutes.
- Remove from the heat and combine in a mixing bowl with the puy lentils and chopped vegetables. Mix well and serve.
