Creamy courgette, chilli & tempeh pasta
Creamy courgette & chilli pasta with our Mediterranean Tempeh Pieces. Tasty high-protein dinner ready in the time it takes you to cook the pasta.

ingredients
- 1 pack of Better Nature Mediterranean Tempeh Pieces
- 100 g linguine
- 1 courgette
- 1 red chilli
- 1/2 lemon (juice)
- 2 garlics
- 35g basil
- Salt & Pepper.
instructions
- Slice the courgette into 8 equally divided pieces. Bring the pasta water to a boil in a saucepan. Drop the courgette, garlic and linguine into the water and reduce to a simmer. Cook to the time specified on the pasta packaging.
- Remove the garlic and courgette two minutes before the pasta has reached al dente. Add to a blender with the basil and a splash of pasta water. Blitz the mixture into a sauce.
- Add a tbsp of extra virgin olive oil to a medium - high heat sauce pan. Add the Mediterranean tempeh pieces and sliced chilli and sautée for 3 minutes before adding your courgette sauce.
- Add the linguine to the tempeh & courgette sauce and mix well.
- Serve immedietely and enjoy
