BBQ Tempeh Wrap

Ingredients
180g BBQ Tempeh Pieces
1 tsp oil for cooking
2 tortilla wraps
2 tbsp mayonnaise
1 tbsp milk of your choice
1/3 teaspoon apple cider vinegar
1 clove garlic, crushed
½ tablespoon dried parsley
1 tsp of salt and 1tsp of pepper
80g fresh spinach
1 large tomato, finely chopped
instructions
Heat 1 tbsp of oil in a pan over medium heat. Add in the tempeh pieces and cook for 4-5 minutes, stirring occasionally.
Add the mayonnaise, milk, vinegar, garlic, parsley, salt and pepper into a bowl and mix until a smooth dressing is formed.
Lightly toast the tortilla wraps on a hot pan, for 1-2 minutes on each side. Place the cooked tempeh pieces, spinach, tomato and dressing onto the wrap.
Wrap up and slice into two before serving.
