Peri Peri Tempeh Wrap

Ingredients

  • 1 pack of Better Nature Peri Peri Tempeh

  • 1 tsp oil for cooking

  • 2 tortilla wraps

  • 2 tbsp mayonnaise

  • 1 tbsp milk of your choice

  • 1/3 teaspoon apple cider vinegar

  • 1 clove garlic, crushed

  • ½ tablespoon dried parsley

  • 1 tsp of salt and 1tsp of pepper

  • 80g fresh spinach

  • 1 large tomato, finely chopped

instructions

  1. Tear Peri Peri Tempeh into bite-sized chunks. Heat 1 tbsp of oil in a pan over medium heat. Add in the tempeh and cook for 4-5 minutes, stirring occasionally.

  2. Add the mayonnaise, milk, vinegar, garlic, parsley, salt and pepper into a bowl and mix until a smooth dressing is formed.

  3. Lightly toast the tortilla wraps on a hot pan, for 1-2 minutes on each side. Place the cooked tempeh pieces, spinach, tomato and dressing onto the wrap.

  4. Wrap up and slice into two before serving.
