BBQ Tempeh Wrap

If you're looking for something easy and super tasty, then this BBQ Tempeh Wrap is for you. This high-protein wrap is ready in less than 30 min and packed with flavour.

ingredients

  • 180g BBQ Tempeh Pieces
  • 1 tsp oil for cooking
  • 2 tortilla wraps
  • 2 tbsp mayonnaise
  • 1 tbsp milk of your choice
  • 1/3 teaspoon apple cider vinegar
  • 1 clove garlic, crushed
  • ½ tablespoon dried parsley
  • 1 tsp of salt and 1tsp of pepper
  • 80g fresh spinach
  • 1 large tomato, finely chopped

instructions

  1. Heat 1 tbsp of oil in a pan over medium heat. Add in the tempeh pieces and cook for 4-5 minutes, stirring occasionally.
  2. Add the mayonnaise, milk, vinegar, garlic, parsley, salt and pepper into a bowl and mix until a smooth dressing is formed.
  3. Lightly toast the tortilla wraps on a hot pan, for 1-2 minutes on each side. Place the cooked tempeh pieces, spinach, tomato and dressing onto the wrap.
  4. Wrap up and slice into two before serving.
