BBQ Tempeh Wrap

ingredients
- 180g BBQ Tempeh Pieces
- 1 tsp oil for cooking
- 2 tortilla wraps
- 2 tbsp mayonnaise
- 1 tbsp milk of your choice
- 1/3 teaspoon apple cider vinegar
- 1 clove garlic, crushed
- ½ tablespoon dried parsley
- 1 tsp of salt and 1tsp of pepper
- 80g fresh spinach
- 1 large tomato, finely chopped
instructions
- Heat 1 tbsp of oil in a pan over medium heat. Add in the tempeh pieces and cook for 4-5 minutes, stirring occasionally.
- Add the mayonnaise, milk, vinegar, garlic, parsley, salt and pepper into a bowl and mix until a smooth dressing is formed.
- Lightly toast the tortilla wraps on a hot pan, for 1-2 minutes on each side. Place the cooked tempeh pieces, spinach, tomato and dressing onto the wrap.
- Wrap up and slice into two before serving.
