Tempeh Tacos

Perfectly seasoned tempeh chunks, fresh salsa, creamy avocado and a dollop of sour cream...this dish is a winner. These tacos are high in protein, super easy to make and oh so tasty.

ingredients

  • 200g (1 pack) of our Organic Tempeh
  • 4 teaspoons olive oil
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • ½ teaspoon chilli powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon cocoa powder
  • ½ teaspoon salt
  • 2 tomatoes
  • 1 red onion
  • 1 red pepper
  • Half a lime, squeezed
  • 6 taco shells
  • 1 avocado
  • 100g sour cream
  • 1 bunch spring onions
  • 1 bunch of coriander

instructions

  1. Tear the tempeh into about walnut-sized chunks. Heat olive oil in a pan over medium heat.
  2. Add in the tempeh chunks and cook for around 3 minutes until slightly browned.
  3. Add in the spices and salt and cook for another 5 minutes until a dark brown colour. Take off the heat.
  4. To prepare the salsa, finely chop the tomatoes, red onion and red pepper and mix together in a bowl, along with the fresh lime juice.
  5. Slice up the avocado.
  6. Start compiling your tacos (don’t forget to include the sour cream!) and add coriander and spring onions to garnish.
